Almond flour cookie recipe - just tried it YUM

King Arthur Flour sends the Daughter recipes now and then.  Today's was for almond flour cookies. Just made some and they are REALLY good (and like 2 to 3 carbs per cookie).

1 cup almond flour
3 tablespoons butter
3 tablespoons confectioners sugar
1/8 teaspoon salt
1/2 teaspoon vanilla

Mix together until blended. Form into 1-inch balls, place on cookie sheet. Pat/smush down to be only about 1/4 inch thick. Cook at 350F for 8 to 10 minutes. Then let them cool a few moments (or they'll fall apart) before taking them off the pan to cool on a wire rack. They're done when they turn golden.

I made 3 batches - one the original, one with lemon extract instead of vanilla, and one with orange extract instead of vanilla.  They all turned out well, but I think ya have to put more orange extract in than either vanilla or lemon, as I could barely taste it. But they were all really good, would be nice with a cup of tea in the evening.

One of the last hurrahs before the serious diet starts.  ;)

Hmmmm, I’ll have to give that a try! I love good recipes

They are really good (in my opinion). Not low calorie, but low carb.  8)

Does the almond flour give it that flavour?  Would almond extract be overkill?  I ask because I LOVE almond extract/flavour, but if the flour imparts it, I would stick to vanilla.  (* When I have an oven.)

I think you could add almond if you wanted. It already has a nice almond flavor, but kinda like chocolate, for a flavor-lover there's no such thing as too much. Alternately, slivered, roasted almond pieces would go nicely in there, I think!
