Christmas Markets in Europe?

So there seems to be an option to take a 3 day trip to Europe by bus/ferry to see a Christmas market. (I think it'd be either Bruge or Amsterdam.) For just over 100pounds per body.  Has anyone been to these? If so, which is better?

Also, P&O ferries seems to be the overnight mode of travel (so no Hotel). Not sure how restful that would be. Anyone done the overnight ferry? How was it?

Not sure we should go with the tour company (Caledonian) or just book something ourselves from one of the markets https://www.expedia.co.uk/vc/package-holidays/christmas-market-breaks  available.  I'm thinking for the first time we should go with an established company. (?)
