Financial
What are the date ranges of your payslips and bank statements?  Do they show six FULL months, and not a day less?

Relationship
I only see five items of correspondence dates.  Am I miscounting?  Did you plan to include something else more recent for the sixth item?
1. May/June 2018
2. October 2018
3. February 2019
4. June 2019
5. October 2019

Accommodation
You just need the Land Registry document and the mortgage statement for where you will live from now and going forward.  You do not need the letter from your father for where you lived before the move in October.

Do your payslips have the pay period date range on them?  Like, "1 Sep 2019 to 30 Sep 2019"?  Or is it just the pay date?  If it's just the pay date, you need to include a seventh payslip to show six FULL months.  And you'll need the bank statement that shows that seventh payslip depositing in.

Okay, that should be good.  Just make sure your bank statement extends to show the last deposit going in, and I think you're set.

You need to scan every page of the applicant's.

I don't know for sure on the sponsor's, and I don't want to misguide you, so it might be good to just err on the side of caution even though I think you only need the photo page.

Before the application went online and the upload of documents was available, they always required a photocopy of every single page of the sponsor's passport, so I would assume the same applies now, and that you need to scan every page of both passports.
