Concerns about future FLR

Hi again! I've been in the UK for a year now and its been great! But I'm a bit concerned about the correspondence items I will need when i apply for my extension.

So when I moved here we initially lived with my Husband's parents for a few months until he found out he was going to be going back to university two hours away. We moved into our flat in that city in December, but because it was quite a last minute move we kept out jobs here in London and decided to travel back on the weekends to work until we could find a suitable job in the new city. The only letters I received in those first couple months was for my NINo appointment, and a pension letter because it was hard to get anything in my name.  Once we had our flat we started getting mail for the water, electricity, council tax, etc. I had letters for December and January from these. It was all grand. Then coronavirus happened and we couldn't really travel back and forth anymore. So for the past few months we have been staying back at his parents house because we are still working.

The other day we were finally able to go back and check on our flat and of course one of the things I wanted to do was grab our mail and organize it with the rest but all our mail was gone. (It's a small building of a few flats with open mailboxes slots in the staircase, so I'm not sure if they were taken or thrown away. Honestly no idea why. It's all just bills for the flat.) Anyway now I'm just panicking about having a possible gap in time when we apply for the extension because I was trying to get something every month to be safe. I've reached out to the water company and they are forwarded are bills here for now, and I am going to try to ask the others to do the same tomorrow but I am still worried how that will look.

I did a quick search on here and saw some say that you can write a letter of explanation if you have some items of correspondence missing and just kind of wanted a bit of advice.  Obviously the extension is still a ways away and the rules could change by then but I just want to be as prepared as possible and don't want to risk messing up.
