After a thoroughly enjoyable long Christmas weekend of food, I am doing our mid-holidays grocery shop for Round Two: NYE. We've decided on "ultimate platter", which means cheeses, meats, cruditès with hummus, and canapès. I'm cooking for just the two of us, so it's potentially going to be ridiculous.
My canapès will hopefully include:
- mini smoked salmon and broccoli quiches
- bruschetta
- mini Welsh rarebit
- pizza "Christmas crackers" in filo
While I am excited about the flavours I will get to nom, I'm slightly apprehensive about the amount of work it will require (obviously, I'm buying puff pastry and filo), and potentially making too much food. Hopefully, we will have a good balance of indulgence versus fresh and light, though.
What are you guys doing? Have I missed any super easy and tasty ideas?
