My wife's Citizenship ceremony is on the 3rd of April next month. We are looking at going away on holiday during the Easter holidays. Now that she has UK Citizenship, is she allowed to travel out of the country and still use her BRP card (now online), or would I need to apply for something else in the meantime?
I'll submit her British passport application once we're back from holiday.

Please note that I have doubts that your wife has UK citizenship if she has not yet attended a citizenship ceremony.
Her application may have been approved, but it was not until I attended my ceremony and swore/affirmed my acceptance of the oath that I felt that I had been granted citizenship of the UK by the government.
Also, I recall a clause in the application approval email which gave me a time limit within which I had to attend a ceremony, otherwise my citizenship approval would be withdrawn.
In my opinion:
Until she has UK citizenship (by attending a ceremony) she should consider her previous status to remain as it was.
Once she attends a ceremony, she will have citizenship and should apply for a UK passport immediately. (Mine took a week...the HO has all the info they needed from my citizenship application, so it was quick.) And the HO required me to immediately cut my BRP in two and return the parts in a few days.
Upon entry to UK, if her BRP is not accepted, she should be able to use her existing non-UK passport to obtain a visitor's visa. Unless it is for a country which doesn't have visa-free access.
Sorry, but may I suggest you hold off on your Easter holidays until she has obtained her UK passport and all your questions/worries are handled?
