thanks for the posts on my question... I went to Lidl and got some of those small link sausages, which I think are what you all mentioned, but haven't tried them yet. What I really wanted, though, was something like the hot versions of American breakfast sausage that you fry in a patty... like the hot jimmy dean or owens sausage. can't imagine anything else with a fluffy biscuit and grape jelly... so i think those recipes using pork mince would work out well, just have to find the right way to season it and then shape it into patties. funny how I never even thought of that... I'm so American, I never even consider just making something myself.
