Here's what I made today:
Black Bean Soup
2.5 cups black beans (tinned or dried ones that have been boiled, etc.)
2 cups chicken stock
2 ribs celery, chopped
2 cloves garlic, minced
1 large onion, chopped
1/2 large red bell pepper, chopped
1/2 tsp salt
1/2 tsp cumin
1 tsp hot sauce (optional)
Simmer the celery, onion, garlic, and peppers in the chicken stock for 10 minutes. Add 1/2 the black beans, salt, cumin, and hot sauce. Cook for 5 minutes. Puree the soup. Add the rest of the beans and cook for another 10 minutes, stirring frequently.
Serve with white or brown rice, chopped tomatoes, sour cream, shredded cheese, spring onions, or whatever you like!
Makes 4 1-cup servings.
