My favourite dip is spinach and artichoke.....it's always a big, big hit!  Is excellent with plain tortilla chips, but also goes great with any kind of cracker.  I usually serve water crackers with it.

1 can spinach (drained well and chopped)
1 can artichoke hearts (drained and chopped)
1/2 medium red onion finely chopped (I actually use white onion and it's fine)
1/2 cup mayonaise or salad cream
1/2 cup sour cream (I use creme fraiche here)
1/2 cup mozerella cheese, grated
1/2 cup parmasean cheese, grated
1 to 2 teaspoons Dijon mustard

Stir all the cheeses and creams together in a big bowl.  Add the mustard to taste.  Then stir in the spinach and artichokes.  Spread evenly into a round pie plate.  Sprinkle more parmasean over the top. 

Bake uncovered at 190/350 for about 15 minutes until bubbly and melted.  Serve with chips or crackers.

I have a friend who used to make that all the time! I can vouch for it! It is incredible!!! But make sure you eat it all the first time around (not that that's usually a problem!) -- it doesn't reheat well.

OOh that sounds good too, I am "new" to artichokes and that sounds very yum

This one goes down well with everyone, it is a Persian dish known as "Boorani"

One pot of thick Greek type yoghurt (I use Total brand)
One packet of fresh or frozen spinach (I find fresh baby spinach is the best)
Garlic cloves.

Cook the spinach, allow to cool and chop finely.  When completely cooled (you can speed this up by rinsing in cold water) stir it into the yoghurt. Then stir in at least 2 cloves of crushed garlic, or more if you are a real garlic fan.  Chill for half an hour or until you want to eat it. Serve with warm or toasted flat bread, eg pita, naan.  Easy peasy and everyone loves it.

1pkg or dried onion soup mix
8 oz cream cheese
