In an effort to further procrastinate on the painting, I was wondering if anyone has ever tried mint lemonade.  I saw this recipe and it sounds scrummy, but curious if I could get some first-hand feedback ...

In France, I always have to have a diablo menthe. It's this lush bright green mint syrup served with fizzy lemonade or 7Up. Very refreshing when dining outside and the bright green colour is very nifty...

BTW, I just made a batch of this and it is absolutely fab.  A perfect accompaniment for a light summer lunch.

Sounds very tasty...but, it also sounds like too much work.  You should bottle it and sell it for lazy people like me. ;D

I have made lemonade in the past but found the lemon rind can give it a bitter taste ... any tips for getting rid of that?

Liz, I didn't have a problem with the lemon having a bitter taste.  Don't know if it was because of the mint or not.

Well it sounds really yummy so I might give it a go.  I am not sure if the rind taste is to do with the wax or whatever they put on them these days so I'll make sure I given 'em a good scrub first.

Cait,

What kind of mint did you use, peppermint or spearmint?  I have some spearmint in my yard, but I'm not sure that would taste as good as peppermint.

Yes - when you peel the rind, don't go into the white "pith" of the skin, that's where the bitterness comes from.  Just get the very, very thin yellow layer.
