A quick and easy pudding: Norwegian Apple Pie

This pudding definitely gets two thumbs up for quick preparation and a lovely taste.  The 'pie' has more a cake texture.

Norwegian Apple Pie
1 egg
3/4 cup sugar
1 teaspoon vanilla
1/4 teaspoon salt
1 teaspoon baking powder
1/2 cup flour
1/2 cup chopped nuts
1 cup diced apples

1. With a wooden spoon, mix the ingredients in the order given, folding into the nuts and apples last.
2. Put the mixture in an 8 inch greased pie pan.
3. Bake at 350F/180C for 30 minutes.
4. Serve the pie warm or cold.

This is a US recipe but I used British cups and spoons with no problem.  I did however double the baking powder and substituted raisins for the nuts.  Didn't have a pie tin, so used an 8" round cake tin. Total prep time was probably no more than 10 minutes, if that.

It's lovely served with a bit of custard.  Mmmm!

Sounds very good, I think I will give it a try for tomorrow. Thanks for posting, I needed a new recipe to add to my growing waistline ;)

thanks cait... I was looking for an apple recipe the other night for some apples that were starting to go off and thought I'd give this east recipe a try... my apples were more off than I thought... but other than that it was yummy, great "a la mode"!

Great!  Glad it worked for you.  I made another one (also had a few apples going spare) and cut the sugar down to 1/2 cup with no difference in taste.  I also added a bit of cinnamon.  Nice!

I used cinnamon too!  ;D and chopped walnuts... very tempted to use raisins though, I think we may have another apple not so off I can try! Good hint about the sugar, I thought it was a bit much... not that it made it very sweet anyhow... although I think the walnuts helped tame the sweetness.

Oh, that definitely sounds like something DH would like -- he loves "homey" warm puddings!

Aren't pears a bit more juicy than apples?  If they are, you may need to add a bit more flour so that the 'pie' doesn't become too runny.

That's what I was wondering.  They're simply eating pears, not "baking" pears - so I'd need to keep it from getting too mushy.

I may give it a try - with some almond instead of the vanilla, maybe?  (I love pears & almonds together!)
