Yes, I studied there for 4 months last year. I friggin' love the place and can't wait to go back. What things are you interested in seeing?
1. You should definitely check out "Central," which is the business center of Hong Kong island (metro stop "central" or "admiralty" - BTW, their metro system rocks my universe, it's the best i've seen).
2. Then you should take the star ferry across to Kowloon. If you go there in the evening (around 8pm, i think), there are frequent fireworks and they're amazing! Kowloon is VERY touristy around the Tsimhatsui area b/c the big hotels are there, but it's worth taking a peek.
3. Don't forget to get to Victoria peak in central with the 100-year old trolley-thing - the views are absolutely stupefyingly amazing
4. There are lots of markets if you're interested and many are touristy. One famous one is Stanley market, at the southern part of Hong Kong island - lots of touristy/souveniry type stuff but some bargains, too.
5. Too bad you won't have time to go to the surrounding islands - there's a 60+ meter Buddha on Lantau island (i think...) and lots of peace and quiet interspersed with buddhist temples

This is such a great city...it combines the west and the east, the sleekest business technology with feng shui and amazing beauty, and the people have been extremely nice to us. Food markets are fantastic. Let me know if you have any specific questions though - glad to help if i can!
