fuzzy brie

I am not a brie fan, but I bought some a few weeks ago to remind myself why I don't. I bought brie with blue stilton inside. I put it in a plastic airtight container and haven't opened it since then... and now I see it has white fuzzy bits! I was surprised. Is that what happens to brie when it gets old?

It's usually recommended that you store cheese in the packaging it came in until you need to open it.  Even though it's in an airtight container, even a teeny bit of air could cause it to get a bit fuzzy.  I'm guessing that's probably what happened.

yes, I imagine that was the reason! I ate a little when I opened it and anticipated eating more later... later just  turned out to be a few weeks, oops!

i was quite impressed with my little science experiment. Fuzzy white mold on blue stilton is cool!

I have that happen with any kind of cheese. I always forget that it does that, after it's been opened, no matter how I store it, and I always buy too much. I have thrown away more cheese here than I ever have in my life!! It's annoying really, but I'm buying smaller now, and trying to use it sooner rather than later.
