This is the best meatloaf I have ever made, and its with turkey!  Serious, boy had never had any meatloaf before his first trip to SF last year.  Then he came home and made it for his house mate, and now she's hooked!  Try it sometime, you never know, they may love it!!!


TURKEY MEATLOAF

Active time: 30 min Start to finish: 1 1/2 hr

1 1/2 cups finely chopped onion
1 tablespoon minced garlic
1 teaspoon olive oil
1 medium carrot, cut into 1/8-inch dice
3/4 lb cremini mushrooms, trimmed and very finely chopped in a food processor
1 teaspoon salt
1/2 teaspoon black pepper
1 1/2 teaspoons Worcestershire sauce
1/3 cup finely chopped fresh parsley
1/4 cup plus 1 tablespoon ketchup
1 cup fine fresh bread crumbs (from 2 slices firm white sandwich bread)
1/3 cup 1% milk
1 whole large egg, lightly beaten
1 large egg white, lightly beaten
1 1/4 lb ground turkey (mix of dark and light meat)

Accompaniment: roasted red pepper tomato sauce or ketchup
Special equipment: a meat thermometer or an instant-read thermometer

I love meatloaf. I take the mince and mix it with one egg, bread crumbs, grated onion and salt. Then I shape it into a loaf and peel potatoes and slice them into wedges and put it all in a roasting pan. Then I pour tomato juice all over the entire thing and bake for about 90 mins. I like to have sweet corn or corn on the cob with it. Very nice!

I had never cooked meatloaf before, so I tried this recipe the other night:  http://beef.allrecipes.com/az/RmplFmilyMtlf.asp 

It was a winner!  I made it in muffin tins for little individual meatloaves, served with mash and green beans.

I did a meatloaf tonight because all this talk was making me hungry. I actually did something different which turned out quite nice and DH loved it. I add a bit of Nando's Garlic sauce to it and it gave it a nice (hint of spice) flavour!  Would definately recommend it!
