Muffin Recipies

I wasn't sure where to put this, but I think it is more of a food question that a wedding question!

I am making my own wedding cakes, as I figure it can't really be that hard, and I will be so skint in the run up to the wedding it will give me something to do to keep me occupied.  I am looking at doing lots of mini cakes like the one here http://www.peggyporschen.com/images/wedding/minature/2minicakes.jpg and I was wondering if any of you have any favourite muffin recipies you would like to share!  The more flavours the better!

The two easiest muffin/cupcake recipes ever -

take one box yellow cake mix
one can pumpkin
about 1/2 tablespoon pumpkin pie spice

mix, then bake according to directions on box

I haven't frosted them but bet they'd be to die for wih cream cheese frosting

also you can do the same with a chocolate cake mix and a can of pumpkin
mix and bake as directed, then chill in the fridge.
