Vegitarian Recipies

I thought i'd start a thread on this as eating Veggie is usually quite healthy and inexpensive

I have a friend from WW in the states that has an amazing site.  I made her eggplant casserole last night and was in LOVE

Be warned as it is in American measurements and some of the recipies do have stuff we can't get here, but you can always sub in stuff

What a wonderful site! i love that every recipe has a little picture to click on- not just the name of the recipe. This will come in very handy.

I'm making the spicy tortilla soup tonight. Looking forward to it.

Jon is vegetarian and I'm always trying to find foods that I'll like but without meat.

I swear by the 'Cranks' cookbooks, there are some fantastic recepies in them.

The spicy tortilla soup is gorgeous. Totally recommend it. I put a bit more cilantro in it (because you can never have too much) but even with the amount they suggest it'd be good. Really good. Jon loved it.

Aimiloo, thank you for starting this thread!  My daughter is vegetarian and I often go meat-free.  I'm always looking for good veggie recipes.

I'm trying the 4 bean enchiladas tonight. I don't have nacho cheese soup like they ask so I've had to improvise with regular cheese. I'll let you know if it's any good.
