a good white bread recipe?
« on: February 27, 2007, 11:46:23 AM »
We finally got the transformer for our KitchenAid and I am now on a mission to bake! I'm looking for a good white bread recipe - not too dry or airy. I like my bread on the moister side for sandwiches and toast. We have the KitchenAid so will use that for kneading and will bake in the oven (not a breadmaker obviously!).

Any recommendations?

Have you seen the new "No Knead Bread" recipe out there? I know you want to use the Kitchenaid, but this bread is awesome. Taken blogger land by storm!

I have seen that recipe on Chocolate and Zuccini. Not sure about it to be honest. Mostly because I don't have a suitable pot to bake it in!

Well, my secret recipe for good fresh home made bread is going to the grocery store and buying ready-made loafs in the freezer section that you let rise and then bake ;D

But I did a few searches and found this one but i haven't made it so can't speak for it. I'm trying to get my mom to dig out her bread recipe to post because it's great, but in the mean time...

HOMESTYLE WHITE BREAD
4 c. (2 lbs.) all purpose flour
2 1/2 c. lukewarm water
2 (1/4 oz.) pkgs. dry or compressed yeast
1/2 tsp. salt
1 tbsp. vegetable shortening or butter
1 tbsp. sugar
Dissolve yeast in a little warm water. Add remaining water and mix. Add butter. Mix or sift together dry ingredients. Add half the flour, mixing with spoon or electric mixer or bread kneading attachment. Turn dough out on a lightly floured board or other surface.
To knead, fold the dough over and push with the heel of the hand, adding remaining dough gradually. Give the dough a quarter turn and fold over and push again. Continue this folding, pushing and turning procedure until the dough is smooth and elastic, usually 8 to 10 minutes.

Place the dough in a greased bowl, turning to grease the surface. Cover the dough with a cloth and let rise until double in bulk. To determine whether the dough has risen enough, press two fingers about 1/2" into the dough. If the indentations remain, the dough is ready to shape.

Punch dough down and cut into two equal pieces. Form each piece into a loaf shape and place in greased baking pans. Allow the dough to rise until double in bulk, about 1 hour and bake in a preheated 375 degree oven for 25 minutes or until the bread is golden brown.

I got it from this website:

I use this, but it's for a bread machine. I wasn't sure if you meant that you had a bread machine or not.....anyway, this is our standard daily bread, it's YUMMY!

White Pan Bread
Ingedients
  • Water 300g
  • Yeast, fresh 18g
  • Bread Flour 500g
  • Salt 12g
  • Sugar 18g
  • Nonfat Milk Solids 25g
  • Shortening 18g

Mix yeast in 38C water until dissolved.
Add rest of ingredients to mixing bowl and mix on 2nd speed for about 10 minutes.
Cover it and let it ferment at about 27C for 1.5 hours.
Roll out to a rectangle shape. Fold it into thirds, and then roll it up into a tight roll that's the same length as the pan you're baking it in.
Bake at 200C.
