Apple pie recipe?

Anyone got a tried and true one?  I can't find the recipe I've always made and really wanted to do one today.

Do you have a pastry recipe you like? If so, then this is the filling I do:

A mix of apples (usually granny smith, bramely, and then a couple sweeter ones - I never do a pie of all one type of apple): about 6-7 apples depending upon how big they are. Enough to fill your pie plate!

Cut apples in slices and toss lightly in flour

To this I mix in about 1/4c white sugar, 1/4c brown sugar, 1-2tsp cinnamon, 1/4tsp cloves, 1/4tsp nutmeg, 1/4tsp ginger, 1/4tsp salt

Place apple mixture in pie plate lined with bottom layer of pastry. Dot about 1/4 chopped butter over the top and then cover with pastry.

Bake 15 mins at 425 then 30 mins at 375 - checking to make sure pastry isn't getting to brown (I have a horrid oven so have to do this).

This is a fairly spicy recipe but I absolutely adore it - and it's my Mom's, too!

That sounds fab balmerhon.  I'm thinking i'll try it tonight!  I usually just use apples, sugar and lots of cinnamon. mix with a bit of lemon juice and a few tablespoons of flour.    Dot with butter and bake. 

I like the spice mix though.  sounds excellent!

balmerhon, that sounds great!! I'm going to make this for desert tonight. Thanks for posting.  DH is begging for hot apple pie and custard.

Oh yes, a dash of lemon juice is good, too. I love this recipe. I far prefer the spicy apple pies to the plainer ones common in the UK. After growing up on this, anything else is too bland.

It's great with custard, cream, or ice cream. But I have to say, I love piece for breakfast with a piece of mature cheddar - heaven!!

My grans' recipe

Bag of granny smith apples peeled, cored and sliced
2 tablespoons of flour
2 tablespoons lemon juice
2/3 cup sugar
2 tablespoons cinnamon
ready made refridgerated pie crust
few small pats of butter
1 egg beaten
9" pie plate

Preheat oven to 350 degrees

roll out pie crust until very thin but enough that it won't tear when putting into pie plate. Put into bottom of plate ungreased.

Mix sugar and cinnamon well together in separate bowl. Add to large bowl with apples and stir until coated.

Then add lemon juice and coat mixture. Add flour and mix again.

Add mixture to pie crust and then put pats of butter spread out over apple mixture.

Take other pie crust and place on top of apples and seal to bottom half. Add edges for decoration to seal.

Cut a few small holes throughout top of crust for airing during cooking.

Brush top of crust with egg mixture.

Bake in oven on top of cookie sheet (for possible dripping of apples) approximately 1 hour or until golden brown.

you and my kids are one.  They live for eating pie for breakfast!!  That is their absolute favourite breakfast in the whole wide world.

Balmerhon, we had this last night for dessert with hot custard and it was heaven!!  Thanks for the recipe.  I'll definitely be making this one again!

If you would like one more variation - here's a favorite of ours..Upside Down Apple Pie
6 tablespoons butter, melted, divided
1/2 cup packed light brown sugar
1/2 cup chopped pecans
1 package folded refrigerated pie crusts (or can make your own)
1 cup granulated sugar
1/3 cup flour
3/4 teaspoon cinnamon
5 large granny smith or other firm apples, peeled, cored, and cut into 1/2" wedges

Preheat oven to 375.  Coat a deep-dish pie plate with nonstick spray and line it with waxed paper.  Coat the wax paper with cooking spray.  In a small bowl combine 4 tablespoons butter, brown sugar and pecans.  Mix well and spread evenly over the bottom of the pie plate.  Unfold 1 pie crust and place in the pie plate, pressing the crust firmly against the nut mixture and the sides of the plate; set aside.
In a large bowl, combine the sugar, flour, cinnamon, and remaining 2 tablespoons butter; mix well.  Add apples and toss gently to coat.  Spoon into the pie crust.
Unfold the second pie crust and place over the apple mixture.  Trim and fold the edges together to seal.  Using a knife, cut four 1" slits in the top crust.
Bake for 1 to 1 1/4 hours or until the crust is golden.  Carefully loosen the waxed paper around the rim and invert the pie onto a serving plate while still hot.  Remove the waxed paper and allow to cool slightly; cut into wedges and serve warm. 
*tip - to prevent oven cleanup - place a cookie sheet or foil on bottom of oven to catch any juices that may leak while baking.  Enjoy!!
