Cheese sauce for tortilla chips?

Now I'm missing me some nacho cheese bad!!!!!!!!
I was just wondering if anyone here has tried making cheese sauce with the cheddar cheese they have here?
Just want some decent cheese sauce to go with my tortilla chips.
Grrr!!! How I miss Mexican food back home.

yes, i've made cheese sauce with the cheddar cheese we have.  :)
I always use either cheddar or Boursin cheese, depending on what type of sauce im making.

If you have a Lidl near you, they sell a nacho cheese dip.  It's ok but very mild, might want to add some jalapenos.

Trying to remember how I made mine -- I think it started with a roux (flour & grease), then milk & grated Double Gloucester or Red Leicester - melted & cooked to the desired thickness.  You could then mix in some pickled jalapenos, or some salsa.  That's how I'd do it.

I buy that too sometimes. It's pretty good. Never thought about adding jalapenos!

Isn't that funny, I read the original post with a we....didn't even notice it was a they.
I use those little cheese sauce sachets......then funk them up a bit. Add cheddar, spices......whatever I feel like, really!
