Rice
« on: March 05, 2004, 02:11:17 AM »
I have to admit, as old as I am (29 and holding), I've only just learned how to cook rice so it's light and fluffy. Previously I cooked the stuff to death and it always turned out stickey and gooey.  Thanks to Delia Smith's web site (http://www.deliaonline.com/), I've learned how to cook rice the way it should be cooked.  Now I'm cooking rice pilaf, egg fried rice, mexican rice and of course, saffron rice.

Just thought I'd share.   :D

Thanks I had no idea she had a website!  Wheeeeeeeeee!  I love rice.  All kinds of rice!  I learned how to cook it from my mom, but my asian roomies helped me perfect it.  What kind of rice do you use?

I use basmati rice....it seems to work best with the dishes I prepare..especially curry.

My rice always turned out rather sticky and goopy too, but now I've discovered Tesco microwavable frozen white rice.  Turns out perfect every time!  ;D

Saffron, I love the basmati rice.  It just seems so much more flavourful, even on its own.

I love risotto!  Unfortunately, hubby doesn't, so it's something I have to order out rather than fix at home.  :-/

i think that the reason a lot of people burn rice or it gets too gooey, is that they boil it the entire time.   after you add the rice, you should bring it down to a simmer.

i have a hard time measuring the proper amt of water to rice, myself, and i would LOVE one of those rice steamers!!!  those things are brilliant!

have any of you ever tried those little cubes that you drop into the rice to flavour it?  it sort of looks like a bouillon cube.  we got some and it's pretty good!  :)

My goodness do not get me started on rice I am SO fussy about this and can only and will only cook it the Persian way:

http://www.farsinet.com/farsieats/recipes/

recipes if anyone is interested - "kateh" is the easiest and quickest way of cooking plain rice but "chelow" is much nicer and worht the effort - in either case it is easier with a steamer or rice cooker, I use a steamer. You will never go wrong with rice if you cook it like this.
