Cheese on top, loads of dips... meal or snack?

Nachos are a meal

I need fish/rice/something else as well

I cook the beans or meat (depending who is eating them!) in a nice spicy, tomatoey sauce.  Then put chips on the plate, top with the beans/meat, then loads of cheese and bung it in the microwave for a minute or two til the cheese in melted. Cold toppings served on the side. I like them a little soggy ... well maybe not soggy exactly but nice and gooey.

I cook the meat with chopped up square onion pieces, melt the cheesy sauce in a saucepan, then I put the crisp chips on a place, top it with the hot meat, pour cheesy sauce evenly over it, then add chopped up tomatoes and olives. Sour cream and guacamole on the side.

I actually bake it on a serving dish.  Do alternating layers of cheese, chips, beans (I like using black beans) and whatever other veggies you want.  Put it in a cold oven and heat to 350º.  When the cheese in the middle is nice and melty, take it out of the oven and slather on sour cream and guac.  Plus I always put some extra guacamole on the table for the straggler chips that don't get enough goo on 'em.

I usually cook the meat ( hamburger or chicken) with taco seasoning, layer the chips on a big serving platter and then pile on the meat, melted cheese, and then toss the cold stuff on, sour cream, guac, tomatoes, salsa, olives, whatever else we have to hand.

OMG! A whole thread dedicated to Nachos? I love it! Nachos is my favourtie "meal" in the world. To me, it's a meal. To my husband, it's a snack, but he's not so fond of nachos. Nachos is a comfort food for me. He can have his beans on toast (yep, he's a Brit), and I'll keep my nachos!

It would take a lot of nachos to fill me up and that much cheese isn't my thing really.  So to make it a meal I'd add beans and some veggies like maybe steamed broccolli.

Yes, broccolli in veggie chilli is totally normal to me--I do it all the time.  I guess I just love veggies and figure if I fill up on them, I'll eat less of the high cal / fat stuff, but still get to have some of it and have my hunger satisfied at the same time--I think that goes back to when I was on Nutri-System years and years ago.

Definitely can be a meal........made some 'loaded' ones this weekend and my man and I polished off the plate and were very full.  We just had refried beans, onions, cheese, ground beef, and avocados, then dipped in salsa and soour cream.  Really yummy...

I make them as a meal.

I do one half fully loaded for hubs and I:  onion, tomatoes, meat, beans, olives, cheese and jalapanos

The other half for the kids:  same as above, but I eliminate the olives and jalapenos
