take a pound of mince...
« on: July 28, 2007, 12:28:21 PM »
I've got a pound of beef mince for tonight's tea, but I'm so bored with the usual bolognese/chilli/curry treatments...

anyone care to share any good ideas for mince?

Mix cooked mince with refried beans, tinned tomatoes and chili pepper or your favorite Mexican flavouring. Layer in a casserole with tortillas and cheddar cheese. Many variations. I make a side of chopped avocado and sour cream with lime juice to serve on top, especially good if your casserole is very spicy.

Make small meatballs and cook with onions, green pepper and pineapple for a Hawaiian flavour.

Add mushrooms and sour cream and serve with noodles for stroganoff.

The other night I sauteed peppers & onions, then threw the mince in, and just before it was all browned, threw in some garlicbutter. Cooked it all together like that, then had pasta with my favorite sauces all ready to mix the meat into. So sort of like italianish homemade hamburger helper.

Make stuffed peppers using those Ramiro peppers (it wouldn't take a whole pound of mince though).

I'd suggest something with couscous, but I seem to recall you're not a couscous fan.

Lots of good ideas there, for which i thank you (Even YOU, you-know-who!  ;) ).

I guess my main problem is that we are going on holiday tomorrow, so im trying to use up stuff i've already got in the house, without going to the shops to buy more ingredients, and i just dont have a lot of the stuff required to make some of those meals.

I do appreciate the tips, though!

Take the mince and mix in.... one small onion, one egg, some bread crumbs, a bit of salt and pepper shape into a loaf and cover in tomato juice. Cook for 75 mins on gasmark 4. Lovely meatloaf!

I've ended up doing a Hamburger Helper type thing... remember Cheeseburger Macaroni?

I made a cheese sauce, which i poured over fried mince, onion & bacon, then stirred in cooked pasta.  It was a big hit with DH... thanks for the ideas!
