Hi Chrissy... i cant call myself an expert, but i have over 20 years experience eating and cooking curries, so im going to chime in.
The dry packet mix is not the way to go.
As Balmerhon said, if you're not confident mixing your own
masala (note: not
marsala, which is a type of wine!)... get a jar, or even better, try Rafi's:
