Nut roast - anyone have a recipe?

I'm looking for a tried and true nut roast recipe.

I want to make one this weekend for DH and I, but he's a bit skeptical so I want to make sure its a good recipe!

I didn't use filo though, I had some leftover pastry (veg shortening not lard) and I made it like a pot pie.  So incredibly yummy and the smell was devine!  and the best part:  it was EASY!

Unfortunately, DH doesn't like butternut squash or aubergines (the recipe looks great though!) :(

He also doesn't like mushrooms.  I married a freak!!  :P

It is years since I made an actual nut roast (like a loaf). I did it once and I didn't have a food processor and spent hours and hours grating the nuts by hand.  I must have been mad! I am pretty sure it was a Rose Eliot recipe though as that was the only cookbook I had back then.

I know this is supremely unhelpful, but it's funny.  ;) A few weeks ago on Saturday Kitchen someone phoned up and asked if any of the chefs had a good nut roast recipe. They all just looked at each other, said no, hung up on the lady and moved on. Sounds rude, and maybe it sortta was, but it was SO funny!

Having said that, I wouldn't mind trying to make one at some point. Might try Britwife's recipe!!  :)

You could substitute them for something else though.  How about carrots or courgettes?  Any vegetable that you can roast would be great in this dish.  (parsnips, swedes...)

That is the exact same recipe my hubby and MiL made for Christmas dinner!  And the funny thing is the aubergine had gone rotten; so they substituted courgettes and peppers for it.

My hubby and MiL loved it.  I liked it pretty much but I didn't like all the butter taste which seeped into everything.  I probably would have used olive oil and less of it as well.  Also I don't really like nuts that much.   :P

Next year we will do something different.

This is a good basic recipe  - you can substitute other nuts for the cashews and also put in left over veg.
