HELP: yeast packet sizes
« on: December 23, 2007, 08:27:32 AM »
Ok, need to slap together some dinner rolls and want to do potato rolls.  I have a US cookbook that calls for 1 package active dry yeast.  Anyone know if the US and UK packet sizes are the same?

On a side note, do you think it would be better to use strong bread flour for this recipe as there seems to be a difference between US and UK plain flour?

TIA!

I've used UK packet yeast in US recipes, and it works fine. I think they're pretty much interchangeable. A US packet is 2 1/4 teaspoons, I know...

Definitely use strong bread flour. UK plain flour doesn't have a high enough gluten content for bread-making.

Have fun baking! :)

The amount of yeast isn't that important.  you can use  a tiny bit and let it rise over night.  The more yeast you use, the more you need to knead the bread and the less you have to let it rise.  If you use  a little bit, then you do a long slow rise and let the yeast do the kneading.  You don't really have to knead the bread at all.

Yep what they said. :) Definitely use strong bread flour. Or even very strong bread flour if you have a highish potato content.

So if I wanted to make cinnamon rolls, should I be using strong bread flour rather than plain flour too?
I refuse to answer that question on the grounds that I don't know the answer.

Yes, anything with yeast needs strong flour.
