Gem Squash

I got two of these in my organic veg box this week and I'm thinking of doing a stuffed squash dish but am a bit unsure as to what to put in it.

I was thinking of some rice, but I'm open to other ideas.

Anyone?

I've no idea what gem squash is!
I had to google it, but when i did, it showed one stuffed with something that looked like mushrooms and rice.

I'd probably not bother stuffing one, and just slice and sautee, as i would do with courgette.   But im lazy!

Neither did I before I got them. We get such random fruit and veg in these boxes, I love them. Really makes us think outside the box.

I had to google it too--looks like it's a winter squash like acorn squash rather than a summer squash like courgette. When I was growing up my mom always baked acorn squash with butter and brown sugar in the cavity. Maple syrup would be good too, I bet.

Some of the other things that I really like with winter squash are goat cheese, leeks, walnuts, cranberries, sage, thyme...lots of autumn flavors.

I love getting random things in my veg box, too. I'd be happy to see some of those guys! Enjoy!
