Another option is to boil them first (to make sure they cook) and then pan fry or grill 'em to the crispiness that you like!   ;)

I cooked my sausages last night the Nigel way - and they were amazing! ;D

He advises to lay them in a skillet & let them gently fry for a really long time -- like 45 minutes to an hour.  I used my cast iron skillet & put a little oil in it, and just let them fry away on very gentle heat for about an hour - turning them about every so often, just to have the skin brown as much all around as possible.  And do not prick them either. :)

It's a long time, but the heat should be so low that you don't really worry about it & you can do other things (I was making mash & our veg dish) while they're cooking.

The way I did them last night, because they were cooking on such a gentle heat - no smoke!  And they were perfectly cooked - done all the way through & brown on the outside. :)
