It definitely puts a more central/eastern european spin on it, rather than say, just like an italian meatball stuffed in cabbage

Yup, that's the way mommy used to make. ;) Unfortunatly, she hardly ever wants to bother anymore and even the ones they serve in Russian restaurants around my house in NY are made only w/ tomato and that just doesn't taste right to me.

I'll try that one day! Except that I don't have a potato ricer. I use an old-fashioned masher.

im watching ricers on ebay just now... i really want one!

Cauliflower is a great idea, but I might add a suggestion to experiment with chopped up shirataki noodles.  I am not exactly sure if you could pull it off (they really need to pick up the flavours of the food around them), but it might be worth the try.  There are two types of shirataki, and one is lower in carbs than the other.
