Homemade tortilla chips
« on: March 22, 2008, 10:16:30 AM »
Has anyone tried making their own tortilla chips, my boyfriend (from texas) is constantly bemoaning the whole mexican food thing, and we made some great  salsa last night, (which was out of this world) plus guac and a cheese nacho sauce,  and we had some nice enough chips from the local ethnic supermarket, but I really want to make some authentic ones myself, probably following this recipe

Sainsburys is delivering my masa harina flour (they had it suprisingly) later on and if anyone has any tips that would be great! :)

I've only every made them from pre-made tortillas, but this doesn't look too bad.  Give it a try, what's the worst that could happen? They come out bad and you throw them away!  :P

Making the chips from the tortillas is easy.

Cut the tortillas into triangles (or leave whole). You can either deep fry them for a few seconds or brush them liberally with oil and put them in a medium-hot oven for a few minutes, turn them over, cook for a bit longer until crispy.

I used to make my own all the time. It takes a few batches to get it just right (not too dark, not too soft), but it's well worth it.
Another shameless promotion for www.mclevey.com, the best place on the internet to buy art.

me too... i just cut corn tortillas into quarters and fry.

i used to make my own corn tortillas on a tortilla press (back in the days when you couldnt get a corn tortilla here for love nor money)... that was an awful faff.   I ended up giving the press away to a fellow expat (at considerable cost to me, for the postage), and she never even thanked me!   >:(   Hopefully no one on UKY is recognising her self here... i believe she's long gone.

I LOVE homemade tortilla chips from flour tortillas. There was a mexican restaurant my family used to go to years ago, they would have a bowl of both chips, flour and corn, on the table with the salsa. YUMMY! Anyway, if you're going to go to the trouble to make your own, do up some flour ones too.

I use to make them as a child with my nanny.  She was the best cook ever!  Just do not let my Mom know.  I have to say I would bake them.  I was taught to fry them in oil but I do not like them if they are greasy.  My Gran, probably the worst cook ever, use to put them in the toaster and then cut them up.  To be fair to my Gran they did crisp up nicely and be perfect color and texture.

Tex-mex stuff is easier to find even since I have moved here.  There is also the mex-grocer that you can get stuff on-line.  I do miss tamallies.  I have the ingredients but just hate to mess around with it.  I think tex-mex will be the next big thing because I saw James Martin rave about it on Saturday Kitchen.

I am sure you will enjoy finding different ways of making things that remind him of home.
