I make a spinach and bacon quiche that is really nice. The bacon is really American bacon, so I think you'd need to use streaky bacon (hope that's the right term). It's very easy and goes together pretty quickly. Very nice for breakfast, brunch or a dinner. We love this one!
6 large eggs
1 1/2 cups heavy cream
salt and pepper to taste
2 cups fresh spinach, chopped and packed
1 pound bacon, cooked and chopped into bits
1 1/2 cup swiss cheese, shredded
1 9" pastry crust fitted in a 9" pie plate. ( I use refrigerated pie crusts, but if you have a recipe you like you can make your own.)
Combine eggs, cream, salt and pepper with mixer.
Layer the spinach, bacon and cheese in the bottom of the pie crust.
Pour egg and cream mixture over top.
Bake at 375 degrees 35 to 45 minutes until set.
