We just ordered the book kate_mate recommended. I guess I have to get to the store to buy these spices!

I hope you enjoy it! The main obstacle is getting all the ingredients, and making the base sauce, but once you have that, you can use it to make any number of different curries. And you can make a big batch of the base, and then freeze, so that you can save yourself time down the line.

I'm loving that method of cooking! It makes it perfect for nights I don't feel like cooking.  ;D

I can see why you might have checked out Indian cooking sites and not seen what you are used to - the word 'curry' actually just means 'gravy' - it's not really a 'type' of food - they don't have chicken tikka masala in India and it's an entirely Anglosaxon version of Indian food.  For those kinds of recipes in the US I used to use foodnetwork.com.  Have fun!

If he's missing British-style curry house food, this book might be useful:

We have it, and find it easy to follow and useful.

This book rocks!  My in-laws gave hubby a copy of this book before he moved over to the states in '92.  Our copy has seen a lot of miles, and is pretty beat up-but it is one of our favorite cook books.  Now, if I only had the freezer space to make a bunch of onion sauce like I did in the states....

I tried to buy that book off of Amazon, but after months of the date getting pushed back, we cancelled the order and I just found it on eBay. Now I just have to wait and see. I didn't want to do the Buy It Now.
