I like to slice up zucchini or other small squash into large flat pieces, coat them in olive oil and garlic salt and pepper (Suzie Q Santa Maria Style seasoning in the States) and grill them.  Every time I had people over, they'd all be gone instantly and everyone was asking me for the "recipe."  It was soooooo tasty!

We had chunks of lamb on skewers tonight (on the BBQ), and also grilled slices of eggplant/aubergine.

I had a book called the vegetarian grill in the states that I regret not getting more use out of, the recipes I tried from there were all fab. Particularly grilled pineapple with rum sauce. Yum!
