I'd say my cooking has become tastier but less healthy. Mostly due to my discovery of the wonders of cream. And full fat cooking in general, which I almost never did in the states.

Hey Cakewench....this is the recipe I used for the sauce, although I couldn't quite make it exactly like the recipe. I didn't have tomato sauce, so used paste instead. I also used WAY too much chili powder......well I used two tablespoons.....but I guess the chili powder we have is way too strong. Anyway, I tweaked and tweaked, and it came out really yummy.

I did up some boneless skinless chicken breast with some onion, cumin, all seasoning, pepper, and a little bit of the enchilada sauce, as I'd made that first. The tortillas I did homemade as well, I just did white flour tortillas, with a handful of cornmeal thrown in for that corn taste. //

Elynor, I make tortillas all the time, we prefer homemade. We don't use a press. I'm glad you mentioned the masa in Sainsbury's, I've been tempted to buy it, but it's really expensive! Now I know better!
Flour, I don't use a recipe really, just mix some flour and add a bit of salt, baking powder, and a little oil, then mix all together with lukewarm water.
Is it flour tortillas or corn that you're not using a press for? I don't use a press for flour tortillas either, but I can't imagine making corn tortillas without one. I shall be extremely impressed if you do!

Yes, I've made corn tortillas, with masa, at my parents last time I was there. No, I didn't have a press. They were yummy! We did fish tacos.

Thanks for sharing the recipe, DD!

I do miss having readily available corn tortillas around.  :(  I could certainly make do with flour and my German husband would likely never notice the difference.
