Corn tortillas - was broiling with UK oven

edit:  Instead of starting a new thread, I thought I'd recycle this one.  New question is in a post from me a few posts down.

Apologies if this has been discussed before (sure it has!) but I'm absolute crap with searching message boards.

I'm wanting to cook this chicken tostada recipe tonight:

and part of the recipe calls for broiling a tomato mixture:

In the US, I've had ovens that you set to broil.  Of course my UK oven doesn't have this.  So would I just use the highest heat setting or would it be better to use the grill?

I thought broiling = grilling?  Does your oven have a grill at the top of it?

I was a bit disappointed with it.  I did forget to buy a chile or two when shopping but I don't think that could have made that much of a difference.  I had leftovers from last night so I ended up making a bowl dish out of it...put the beans on the bottom, added the chicken then put the lettuce mixture on top.  I did try to spice up the chicken more as I found it lacking.  I put a good dose of cumin and oregano in it and that helped considerably.

I do think the chicken mixture (once spiced up with extra seasoning) will make a good enchilada filler.

I'll recycle this thread in order to ask about corn tortillas as well:

I bought Old El Paso corn tortillas.  Are these really as good as say the stack of Mission tortillas we could buy back in the states?  I specifically remember making hard taco shells out of store bought corn tortillas and remembered they turned out crispy and nice.

Well, when trying to fry these Old El Paso corn tortillas, they barely turned out crispy.  I don't know what went wrong other than them not being the right sort of corn tortillas to turn into a crispy tostada bottom.

Right. Quite likely the El Paso ones are part wheat flour, while the ones you got back in the states were all corn meal!

You can get them online at Lupe Pintos, Cool Chile Co, or Mex Grocer (which will give you a discount if you are a UKY Charter Member).

If you're in/near London, Cool Chile Co have a stall at Borough Market, too.

Personally, I imported a tortilla press and a cast iron skillet.  Then I get a big bad of Masa Harina from the States that lasts me quite a long time.  (Though it appears MexGrocer sells it over here as well http://www.mexgrocer.co.uk/Masa-Harina-600g-Tortilla-Corn-Flour-for-making-Tortillas-only--p-16144.html)

Corn tortillas are dead simple to make from dry flour and with a press you can make them quite quickly.  Then they are hot, fresh and super tasty.

I also make my own flour tortillas too...  My partner enjoys them so much it is often requested food.  Check out here for a good low-fat Torilla recipe: http://www.texasrollingpins.com/tortillarecipelowfat.html.  Once you make your own a couple times it will be hard to go back.

I find the mexican stuff in UK groceries nausiating.  I am surprised I haven't ever been stopped coming back in the UK and searched, because they would find suitcases full of dried chiles, mexican seasonings, corn husks, tins of assorted items and cast iron skillets.

I just want to second that corn tortillas are easy to make and SO delicious when freshly made. Just don't buy masa from Cool Chile Co, ugh. The stuff that MexGrocer carries is the same kind my mom brought me from New Mexico.

Also Old El Paso does a Gluten Free Corn Tortilla which is in the Gluten Free section of major retailers.  It works in enchiladas and fried a lot better than the ones with flour. Because it's GF is has only corn!

I've made my own flour tortillas before, but it was such a chore because I didn't have a tortilla press or a griddle...had to use a rolling pin and cook them one by one.  They still tasted good though!

I wouldn't mind making my own corn tortillas as well.  I'm actually going to be in London on Tuesday, but the Cool Chile Co's stall is only open on Friday and Saturday.  Damn!

I couldn't agree more! Since I began making my own I can't imagine buying them at the store (and I'm still in the US!) Definitely worth the investment to make them yourself!
