Here's another baked one that my family love.

Place fish (cod, haddock or whatever) in a greased dish.  Cover with peeled and chopped tomatoes, frozen peas, chopped peppers and mushrooms.  Pour over juice of one lemon (or less if you prefer). Sprinkle with brown sugar and dot with butter.  Cover and bake for about 30 - 35 minutes in a medium oven.

Easy peasy!

Salmon with a Thai style breadcrumb topping.

2-4 Salmon Fillets
1/2 cup plain breadcrumbs
1/2 dessicated coconut
Corriander
Chilli (Flakes or 1 small chilli)
Juice of 2 limes
olive oil
salt
pepper


Put breadcrumbs, coconut, corriander and chilli into a food processor.  All the spices and herbs are to your taste, so use as much as you like/can handle.  Whiz the ingredients together until combined into a sand-like texture.  Squeeze in juice of two limes and drizzle in a bit of olive oil and whiz again.  The texture should resemble damp sand at the end of this.  Add salt and pepper to taste. 

Place Salmon fillets on a baking tray and place a generous amount of prepared breadcrumb topping on each fillet.  Bake in oven for 12-15 minutes at 400 F.

I just cooked a good hunk of salmon and it was delish!

I lined a 9x13 pan with foil, poured in a bit of white wine then lined the bottom with sliced onion and lemon and a few coriander seeds, put the fish on top, skin side down.  Slathered it with olive oil, a bit of salt and pepper and dill.  Put some foil on top and made a nice package,  sealing the top and bottom foil together (like an en-papillote) and baked until nice and flaky.  it was perfect and so yummy.

Breakfast ideas (I usually have one of these on a Sunday)

Smoked salmon and scrambled eggs, just use the cheap packs of off cuts.

Mackerel with mango and poached egg. Saw this on Saturday Kitchen a while ago.....break up the mackerel and pan fry in a little olive oil, serve on cubed mango with a poached egg on top.

Kippers - had some this morning - 69p a pack!



Favourite dinner idea
Thai fish curry - using salmon and prawns
"We don't want our chocolate to get cheesy!"

I remember on my second trip to England, we went up to Scotland to meet with some friends, I asked what they were having for dinner so I could get an appropriate bottle of wine and my friend said "Fish pie" hehe I thought she was joking! but no.

It was FREAKING awesome even though it freaked me out at first. It's basically a seafood version of Shepherds pie.

I don't have an exact recipe cause I generally don't cook with one unless it's baking but here are the basics...

Milk poached white fish (cod, halibut are nice)
Shrimp
smoked fish (am from the pacific northwest so salmon is my smoked fish of choice cause it's about all you can get without going to a specialty place)
flake fish into bottom of a 9x13 pan
add shrimp
save the milk from poaching and make a roux with it.
pour the roux on (sometimes I add Dill weed to the roux)
make some mash, using butter and milk if you wish, but for sure it has to be spreadable
spread the taters on starting on the outside and sealing it... then working your way to the middle, make sure you put a hole in the middle, I use the spatula that I spread the taters on with to poke to the bottom etc...

Bake in.. I dunno t

I don't know the gass mark sorry but like 375ish...

cook for like 20 -30 minutes or until sauce is bubbly

I have been informed that it is complete blasphemy to serve this without peas... so make sure blah blah blah

It is freaking awesome... I did not come up with this recipe just kinda worked it out from talking with the maker and from my own experience. Even my kids that don't like fish LOVE this meal. It is fantastic on a cold night =D

Have you checked your local fish monger? Also, I'm sure you can ask at the fish counter of a nicer grocery store if they can order it for you.

Unlikely.  We have lots of native, sustainable, local fish to try instead!

My Tesco has Tilapia quite often on the fish counter and you can buy it frozen quite easily.

Whenever you find it it will probably have been frozen at some point as I don't think it's fished around these parts.

I made some fish cakes last week that turned out really nice... and cheap, too!
And DH hates salmon, not a big fish eater, and he LOVED them...

I used (sorry no exact measurements, I just wing everything):

1 can salmon
1 can tuna
2 celery stalks minced
3 spring onions minced
one red bell pepper minced
zest of one lemon plus a squeeze of juice
about one Tbsp of dill (didn't have fresh so I used dried)
fresh ground black pepper
about one Tbsp mayo

formed into patties, then dipped into flour, beaten egg, and flour again and fried in a bit of olive oil.  They turned out really zippy and didn't have that fishy taste DH doesn't care for.... really good!   ;D

OK, one more for prawns (I know it isn't FISH, but, still seafood!)... turned out soooo good I had to share!
(Warning:  definitely NOT diet food!)

Again, no measurements here, just sort of winged it:

one package cooked prawns
a couple of Tbsp of butter
a handful of Ritz crackers
a cup of freshly grated Parmesan/Reggiano cheese
2 garlic cloves
1/2 cup dry white wine

I tossed the prawns and butter (not melted, just put a few big chunks on top)in a casserole dish with a few glugs of white wine, then I pulverized the Ritz crackers, Parmesan, and garlic together in the food processor until it was finely crumbled and well-blended (you could do it in a plastic bag with a mallet)and sprinkled on top until it was a nice thick coating.  I baked in 180 C for about 20-30 mins until cheese was melted and gooey, and topped with a squirt of fresh lemon.

mmmm....mmmmmm......good!
