Wheat-free/Gluten free stuffing recipes for Thanksgiving?

I was diagnosed with a wheat allergy over the summer. Does anyone know any recipes for wheat-free/gluten-free stuffing? I'm thinking of using gluten-free bread instead of normal bread. I'm also open to any other recipes.

I don't have any recipes, but coincidentally this blog promises a gluten-free stuffing recipe tomorrow.  I don't know what it will entail (or if it will be any good, for that matter), but it might be worth checking out.

Depends what you're stuffing I guess, if I'm stuffing a chicken or a turkey I use good quality pork mince and add the herbs to it and I never use any bread crumbs at all (it's delish, seriously!)

I'm not really one for recipes, more throw it all together and see, but like one I would make for chicken would be pork sausage meat, onion, massive handful of fresh sage, some cranberries, bit of nutmeg and then blend everything but the sausage meat with a little olive oil into a chunky mix then mix with the sausage meat.
I do different ones depending on what I'm cooking like, with pork I do tarragon, red onion and a granny smith apple.

here's a picture of a "stuffed" pork loin, I was toying with the idea of a food blog! (that hasn't been cooked yet, I just seared the loin in a pan before putting it in the oven)

What about a pilaf-type stuffing with rice/wild rice?

Thanks! Those all sound like good ideas. I think I was just trying to think of what could take the place of bread.  ;D

Have you looked at the Gluten Free Girl blog?  She has some good recipes and her Gluten Free Stuffing sounds quite good and easy (it uses gluten free bread).  Also, some people suggested cornbread to be used in the stuffing...?  Sounds quite interesting.   :)

We've always done some sort of bread/cornbread mixture so this could be good. I thought for a moment I could pay the price but being sick just isn't worth it. So these other alternative look yummy, yummy! Many thanks!  ;D
