DD's first birthday's on Tuesday and right now DH and I have agreed on a carrot cake. The only problem is finding a recipe to make. I have a recipe for Annabel Karmel, but I'm so sick of looking at her smarmy face and just a bit dubious of how yummy it would be to DD & other kids of varying ages up to 5yo. I'm intending to do a white chocolate cream cheese frosting with it.

Does anyone have a non-nut carrot cake recipe they would care to recommend? Or even any other flavoured / creative cakes to recommend? I'm open to ideas and nothing's ever really set in stone with me (much to everyone's infernal annoyance).

On a side note: I've not baked a cake in quite some time. The last time was probably 2-3 years ago, where I made the mix and DH did the tins and was in charge of the oven.

He's more the cake baker than me, but I want to do this one!
