Best Brownies Ever

I've just made my first batch of homemade brownies. They are just the most moist, cake like brownies I've ever tasted and to top it off they are HUGE!!!

This wasn't my first attempt at making them...it's my 2nd. My first attempt went horribly wrong because I didn't have unsalted butter but soon found out that that wasn't the ONLY problem haha.

So they didn't turn out a few days ago and I attributed it too the fact that I had only salted butter and I omitted the salt that was called for because of the salt in the butter. Well, they got done and well they were like eating salt bricks!


I decided yesterday that I'd go get butter and reattempt them today, hoping they'd turn out better as I got unsalted butter. I re-wrote the recipe, got all my stuff ready and started assembling when I noticed I forgot the sugar last time!

Yes, you heard that right! I forgot the sugar. The two whole cups the recipe calls for to make them yummie!

If we can learn anything from this experience it is...don't ever bake while dopped up on Flexaril!

So I made them now and I tasted the batter before I put them in and oh my god they are delicious!

That looks lush.

I can't believe you forgot the sugar though!   Classic! That even tops my last disaster, of putting turmeric in a cake instead of ginger!

Ahh sure!

8 oz (1 cup) unsalted butter plus enough softened unsalted butter to grease the pan
3 oz (2/3 cup) unbleached all-purpose flour plus enough to line the pan (I used cocoa powder to line the pan)
2 cups granulated sugar
4 large room temperature eggs (this is important)
1/2 tsp vanilla extract
2 1/2 oz (3/4 cup) unsweetened cocoa powder
1/2 tsp baking powder
1/2 tsp table salt

I added Chocolate chips...you can add whatever you want.

Preheat & Bake at 350F
Butter and flour a 9" square pan, tapping out excess flour.
Melt butter in medium saucepan over medium heat.
Remove pan from heat - whisk or stir in sugar, followed by all four eggs and vanilla. (This is tricky, make sure you don't get scrambled eggs...one egg at a time slowly and whisking at the same time seems to work)
Stir in flour, cocoa, baking powder and salt. Stir until smooth.
Spread batter into prepared baking pan, smoothing so it fills the pan evenly.
Bake until a toothpick or skewer comes out clean (there will be a few clumps clinging to it) — this will take about 40 minutes.
Mine baked for over an hour because I didn't have a 9" pan...I had an 8".


It's really easy once you set everything out and if you prepare everything ahead of time. I did the pan while the eggs were getting to room temp and I preheated the oven during that time also. I also got the dry ingredients in a bowl...easier.

I am putting together a cookbook of different recipes for my BF as he is a fabulous cook but doesn't own any cookbooks.  Thank you for this recipe and I remember to actually put the sugar in  ;)

I can top you Vicky...my dad made persimmon cookies once, and he's about as blind as a bat. He reached into the cupboard for cinnamon and grabbed brown gravy powder instead. He said they were the best batch of cookies he's ever made...oops, now you know the secret ingredient!  :P

Ahh as I kid I insisted I didn't need help baking and I mixed up the salt and sugar in sugar cookies... blech!!!!!! My mom just rolled on the floor laughing  ;D

Webyj, I told that story to like my whole family today. I couldn't stop laughing! It's seriously the best "kitchen oops" I've ever been told about.
