I'm sure you've already thought of it, but I found the pesto-mozzarella escalopes made a fantastic substitute for chicken parmesan with some marinara - over pasta or not.  In fact, fed it to my BIL and he never sussed that he wasn't eating chicken for some reason. 
I refuse to answer that question on the grounds that I don't know the answer.

Actually, I hadn't thought of it, but that's a great idea! I might do that but serve it with green beans and a salad since DH isn't too keen on pasta. He has no desire whatsoever to try the Quorn stuff, but I bet that one might fly over.  ;) Thanks for the suggestion!
