would adding spring onion rather than normal onions be good? or would the whole base of the dish change do you think??

IMO I don't think spring onions would change the taste too much.  If anything it may just make it a bit sweeter (slightly).

I usually make it by boiling potatoes in milk with a pinch of salt and tons of black pepper, with the milk half covering the potatoes.  When the potatoes are soft, I saute an onion and chop up the corned beef, and add both to the potatoes.  Then mix and eat.

Do you drain the potatoes first?
And if you threw a party
Invited everyone you knew
You would see the biggest gift would be from me
And the card attached would say
"Thank you for being a friend!"

I never thought about boiling the spuds in milk before...good idea  :)

I never realised but the way you described corned beef hash sounds a lot like stovies, both of which I like.  Even though I live in London, I spend a lot of time working up in Scotland, and the canteen at work makes stovies once in a while.  I had to ask like 5 times when I first saw them to understand what the heck the name was, but they tasted great.  Also had to try to keep from calling cans of soda-pop "cans of juice" when I am not up there.  The lady in the canteen laughed at me once when I said "Eye, just this can of juice" when paying at the till.  She shook her head and said "You have been up here too long..."

In my mind stovies and hash are pretty interchangeable.

Funny about calling soda juice.  I've lived in Scotland for 6 years and have yet to call it that.  Or say 'aye' for that matter.

Not even the odd "wee" or "lad/laddy/lassie/lass" or "ach, no"?  Partly it is just me, it is one of the ways I react to feeling like an outsider.  Call me a sellout if you so wish...
