Anyone have a favourite salsa recipe?

I tried two different ones over Christmas and they were awful..... I'm hosting a Mexican meal in a few weeks and would love to serve a really great salsa to my mates...

For pico de gallo-type salsa, I just chop up tomatoes, green onions, and chiles (the green jalapeno-type ones) and add some salt and lime juice. You could use red/white onion and coriander leaves if you like them--I don't.

Will post my more ambitious (cooked) salsa recipe when I get home.

I do the same thing elynor does, only I use red onions. Then I add some green chili sauce, makes it hot and chili flavored, and a bit wetter. I also put in a bit of cumin powder, and always add chopped coriander. Oh, I put a bit of red chili powder in too. It's really yummy!

Mine is very similar to Chevy's Tex Mex Restaurant:

6 tomatoes
2 to 4 red or green chili's (depending on taste for heat)
1 yellow onion - quartered
2 cloves of garlic
1/4 cup chopped coriander
2 T white vinegar
2 t salt
1 1/2 t mesquite/hickory flavored liquid smoke*

Rub oil on tomatoes and chili and grill or roast until charred on both sides.  Chili's will cook faster.  Allow to cool. 

Remove stems from the tomatoes and chili's and place in a food processor adding remaining ingredients.  Pulse on high speed 5 to 10 seconds until desired consistency is reached.  Add any salt and pepper to taste.

Alter any of the above ingredients to taste or double the recipe for a decent amount.

I fry corn and flour tortilla's in oil for the supreme salsa and chip experience.  Naughty, but so tasty now and then.  Definitely addictive.

*I am still using my Wright's Hickory liquid smoke from the US, so I'm not sure if there is a product similar to that here.  It's really needed to have the true similarity to Chevy's salsa.

IMO, this is the simplest & best.  I put a bit of both white & green onions in mine, and I love it with cilantro.  And yes - it's called 'cilantro' when I'm making pico de gallo, but you'll have to buy it as 'fresh coriander' over here.  ;)  ;D

I use canned tomatoes for my pico de gallo.. and..

A pile of minced garlic(at least a head per can o' tomatoes), a diced Spanish onion, a bunch of cilantro, juice from a few limes, a few chopped chili peppers, a bit of chili powder, salt.

Needs to sit at least an hour, (overnight is best) also needs draining.

No vampire problems at my house.
