I usually find polenta a little too bland, too, but that halloumi skewer thing sounds fantastic!

i am from louisiana originally ... and love cornbread ... i have been trying to buy cornmeal for ages and everyone says that polenta will work, but with other things taking up my time i haven't tried it to make cornbread ... so curious if anyone has used polenta to make cornbread?

You get started on it and I'll swing by and give it the taste test.  ;)  That sounds great, even though I still haven't tried halloumi. Will have to give it a go sometime!

DH likes corn, but abhors things made from corn, like cornbread, corn tortillas, etc., and isn't a big fan of rice, pasta, etc., and forget about couscous, so I don't think polenta would go over very well with him at all. I've had polenta fries before with a marinara-style dipping sauce and they were nice.

If you get the dried kind, not the pre-cooked, then yes, it's the same thing.  Polenta is just cornmeal cooked in a certain way.

I bought a GIANT bag of cornmeal in the international foods section of Tesco. I think it was with the Carribean stuff.

I have, and it works but the grains are much larger than regular cornmeal so your cornbread will be denser than you're probably used to.

There is a Caribbean market near me where you can buy enormous bags of different grades of cornmeal (fine, coarse, etc) for super cheap so I'd reccommend looking for something like that.
