kick ars* peanut butter cookie recipe?

We have a ton of Jif extra crunchy peanut butter and also some good roasted peanuts. Anyone have a good cookie recipe?

This one is sort of old-fashioned - no bells and whistles - but always produces perfect cookies, IMHO!

Sift together:
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt

In a large bowl, combine:
1 cup shortening (suppose you could use butter, but I don't think it's needed and shortening will keep them from being too thin when you bake them)
1 cup brown sugar
1 cup granulated sugar
2 eggs
1 cup peanut butter
2 tablespoons water
1 teaspoon vanilla

Add the sifted items, mix, drop on cookie sheet, and press with fork (criss cross so they flatten evenly).

Bake at 350 degrees for 10 - 15 minutes.

Thanks Anne! I ended up using a Betty Crocker recipe that was similar to yours. But I think I'll try yours next time as they weren't quite what I was looking for. Somehow we've ended up with tons of peanut butter in the house so it won't be long before I bake some again!

These are THE ABSOLUTE BEST peanut butter cookies EVER!

INGREDIENTS (Nutrition)
1/2 cup unsalted butter, softened
3/4 cup peanut butter
1/2 cup packed light brown sugar
1/2 cup white sugar
2 eggs
3 tablespoons orange juice
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1 1/4 cups semisweet chocolate chips

Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, cream together the butter, peanut butter, brown sugar and white sugar. Beat in the eggs one at a time, then stir in the orange juice and vanilla. Combine the flour, baking soda, baking powder and salt; stir into the peanut butter mixture. Finally, mix in the chocolate chips. Drop dough by rounded teaspoonfuls onto the prepared cookie sheet. Cookies should be 2 inches apart.
Bake for about 14 minutes in the preheated oven, until the edges are slightly golden and the center is firm. Remove from baking sheets to cool on wire racks.

Anne I used yours with Splenda Blend (made them for dad) and they came out really nicely!  I did do 1/2 butter and 1/2 shortening too.

Hi Sarah - mine was the first recipe - not the chocolate chip one. But I've used mine with a Hershey's kiss in the middle and they were fab, so a button would probably be yummy!

I made Anne's recipe last weekend and they were fantastic. Best cookies I've managed to make in the UK yet.  :D
