Spouse Visa income question

 I am getting ready to apply for the spousal visa and my husband (UKC) recently went self employed. He has only been self employed for 3 months now. He is still working for his previous employer full time and doing odd jobs here and there, however, since he has taken time off to visit me and do various other things, his paychecks for the last 3 months are not as high as the 3 before that.  Once he starts working full time again and does not take more time off of work, his monthly income will be substantial to have the required 100.95 pounds left over each week. He has explained this in his sponsor letter and is showing invoices and bank statements and has a letter from his previous employer whom he still gets work from. Other people have mentioned a self assessment form, what is this and does it apply to him?
Is there anything else we should include with our application? If this does not make sense I can certainly clarify.
