I know some low carbers who follow NT loosely or adopt some of the things (like fermented milk) to their plans. If what I am doing right now doesn't work for me, I might try NT.
I've heard some people with gluten sensitivities/coeliac disease have not been able to eat the bread that they claim should deal with the lectin problems. I've actually not heard of someone with coeliac disease who has been able to eat that bread, but that doesn't mean there aren't people who can eat it without problems.
I think there's a bit of a disagreement about whether pastoral societies were/are all that healthy. That's sort of what most people who follow NT aspire to eat like. Weston Price also studied people who ate pre-herding diets, and I can give you information on the group of diets that have spawned from that and similar research. It has a tendency to be more extreme, but it eliminates most of the problematic lectins. Let me know and I will PM you some links.
