The quesadillas look lovely, though that sort of sauce probably isn't readily available for us UK-ers!
I made some last night, not like hers, really, but I sauteed some peppers and onions, added some chopped chicken, and then tossed in a small jar of the Old El Paso salsa they have here. Heated it up, then put it into the quesadilla with some jalapeno and garlic cheddar cheese (Morrison's - it's the best I've found for Mexican!). They were delicious, but she makes it look so easy to flip them, and they so weren't easy to turn over! I think I tried to put too much filling in, though, to be fair.
Most of her recipes look delicious, but what isn't delicious when it's made with 2 sticks of butter?

You make an excellent point there. Have you seen her mashed potatoes? Lordy, lordy.
I have learned a few good tricks on there - like drizzling milk in the flour before you coat your chicken strips so the flour clings to them in clumps and adds texture. I might try that out tonight!
