Proof of Residence/Employment Document Requirements

Hi,

My fiance and I will be applying for a spouse visa after our wedding in a couple of weeks and i'm currently gathering the required documents.

We will be living with my mom initially and I'm wondering which document should be submitted as her proof of ownership. The house is currently under mortgage, so what is required? The property title showing her as the owner or the mortgage agreement  or both?

Also, my employer refuses to give me a letter stating how long i've worked for them and how much i earn "for security reasons" (no idea what they're attempting to secure but obviously not my visa!) Does anyone know if a copy of my employment contract will be good enough alongside my payslips?

Mortgage agreement, though a recent mortgage statement usually works as well.

Contract and payslips should be fine.
