I don't like beans in the slow cooker.  I do a 'quick soak' with dried beans, I boil them for about 2 minutes, remove from heat and then let them soak for an hour.  Then I drain them, cover them with water again and boil them (simmer) for about an hour to hour and a half. 

Drain again and then add flavourings and then slow cook. 

I find that beans are best baked in a dutch oven in the oven on about 300F.

The recipe I linked to actually mentions that, too. I think I'm going to try it!

Thanks for all the replies on this.
The beans did soften to the right texture, however, i think they taste funny... bitter.
So I think I'm just going to dump the whole pot and chalk it up to experience.

I would boil them for 30 minutes (after soaking them overnight) before putting them in the slow cooker. Not that it is going to help now... but... for next time, maybe?
