Recipe ideas for vegetarian/vegan Xmas

So, we're spending xmas with my boyfriend's mom and I offered to bring a dish. Apparently a relative who is coming has turned vegan & stopped eating wheat as well.

We'll be going over on the eve and I won't be able to heat the dish. I've been asked to bring some appetizers or platter of stuff to nibble on before the dinner.

I've thought of a sort of Smörgåsbord with sliced peppers, tomatoes, cucumbers, cheese, rivitta, swedish hard bread, pate, hummous, olives etc.

I thought of hard or ready fried tofu stuffed with vegetable served with peanut sauce and gosh I've just run out of ideas...... anyone with suggestions?

I think the easiest thing would be to do some mashed potatoes with soy milk.. that way the meat eaters can put gravy on it and the vegan/gluten free guest would have something tasty too.

If I were to do a vegan appetiser thing for someone who had given up wheat, I'd ask why he or she isn't eating wheat.  If it is because of Coeliac disease, you need to make sure your ingredients are not just wheat free, but gluten free, which can be challenging.  For instance, some ready mix spices have gluten.  Sometimes people who are sensitive to gluten can eat small amounts or eat things like spelt, but people with Coeliac disease generally can't:

However, if there are other reasons for this person giving up wheat, you'd have more leeway.

Your idea sounds great, and if you wanted to add a wheat free (and gluten free) way for that person to eat the dips other than just using the vegetables, I'd add some gluten-free nut crackers.  They are really tasty, and if you can't find them in the free-from section of your grocery shop or HFS, then you can find recipes for them online.  They are usually pretty popular with people who aren't avoiding wheat.

Thanks guys loads of fab links!
Legs - I think its because wheat makes her feel bloated etc. On top of everything she stopped eating mushrooms, cheese, milk, eggs, wheat and also prefer gluten free food! Uggghhhhhhhhhhh LOL! I will update when I get the recipe nailed!

Thanks everyone for ideas! I finally settled on a Smörgåsbord of sliced peppers, tomatoes, cucumbers, blue and Italian hard cheese, rivitta, swedish hard bread, vegetarian pate, hummous, olives etc. I also made some corn bread muffins loaded with corn and tofu sushi made from quinoa as well as some vegetarian turkey slices and salami.

So there was something for everyone! And they all loved it ;)
