Some Quorn products are really good. I think their breaded chicken-style and turkey-style products and their pasties are great, but all of those are sort of junk food. Their other stuff can take a bit getting used to, but I like them, especially their deli slices. Some of the nut and black bean burgers are pretty good. I never really got too into prepared products, but used to eat them when I was making Mr A something meaty and didn't want to make an elaborate second meal. I don't do soy, and I think most of Linda McCarthy's stuff has it in it, so I can't really give an opinion on it or other soy products.
Mushrooms make a good replacement for burgers/meat, and you don't need to buy anything processed. Making beans/lentils is pretty easy, especially if you have a slow cooker. There's a pretty good cookbook called "How to Cook Everything Vegetarian". It's an American book, but I've seen it here quite a bit. It's a really exhaustive resource, and I recommend at least getting it out of the library to have a good look at it.
